At the high elevations of Gualtallary, about 1,550 metres above sea level in the Monasterio subzone, Andrea Mufatto and Gerardo Michelini’s project finds one of its most delicate and sublime expressions of Malbec. Built on limestone, gravel and granite soils, this red wine offers an aristocratic interpretation of mountain viticulture that subtly sets itself apart from other bottles from the area. While its “brother” from the same estate, La Cautiva Óleo, displays a more earthy, dark, wild character with hints of iron and fully matured blood in oak, La Cautiva stands out for its distinctly floral profile—where sprigs of lavender and violets emerge—clean acidity and a polished structure. Its shared ageing in large‑wood staves and used barrels gives it an exceptionally delicate mouthfeel, with tannins as fine as chalk, making it a wine of immense refinement and extraordinary food‑pairing potential.
