This Lagoa, straight from the Algarve, delivers a proper lesson in red fruit – cherry and raspberry swirling through a compote that’s done exceptionally well. Rumour has it the secret lies in careful fermentation and ageing in vats amongst rye straw – a touch that really enhances its character.
