Harvested on August 15th – a crucial date for preserving its delicate aromatic purity – it offers a striking balance of freshness and acidity, a rare quality for this style. The minimal winemaking allows the clay-schist terroir to truly shine, while spontaneous fermentation and ageing on the lees contribute to a surprisingly complex character. Seriously, it’s fantastic with sheep’s cheese or a classic Bacalhau à Brás.
