Lavradores de Feitoria O Três Bagos Sauvignon Blanc is the result of an experiment carried out in the 2000 harvest, which led to a true sales success in Portugal, where it became the benchmark for wines of this variety originating from the Loire Valley in France. It is 100% monovarietal, expressing the fresh aromas characteristic of the grape, but the shale soils and altitude (vineyards planted at over 420 m) reveal a mineral and restrained profile. For this style, choosing the right moment for the harvest is absolutely decisive. Its acidity, combined with a partial maturation in wood, gives it structure and great aging potential. Over time it develops a more complex and vegetal profile (asparagus). Harvest: Manual, in small boxes. Vinification: 80% in stainless steel, 20% in barrels. Maturation: 80% in stainless steel and 20% in French oak barrels for 4 to 5 months. Winemaker: Paulo Ruão. Soil type: Shale. Age of vines: 25 to 30 years.
