This "Mapa Tardia" has clearly had a rather close encounter with noble rot – it seems to have embraced it with a certain boldness. Harvested at a date already marked by the influence of this “good” yeast, the Viosinho and Gouveio grapes, alongside Malvasia Fina, underwent a carefully controlled fermentation at low temperatures, a valiant effort to tame what could have been a disaster. The ageing in French oak has thankfully imbued it with a touch of elegance, despite its somewhat unpredictable nature – ideally paired with black pork dishes, perhaps featuring a fig element.
