The grapes were selected in the vineyard and then placed in tanks with 40 % destemmed and 60 % whole clusters, allowing a gentler extraction of colour and aroma compounds during two weeks of fully stainless‑steel alcoholic fermentation, followed by malolactic fermentation in stainless steel.
