Baynos is the latest addition from Bodegas Mauro in Rioja. The aim is to create a unique expression of the soils of Baños de Ebro, where the terrain is poor but rich in clay, with vineyards divided into small plots. Baynos 2020 is made from Tempranillo and Graciano grown on vineyards cultivated organically and biodynamically, in the process of ecological certification. The grapes were destemmed and fermented in concrete tanks, relying on natural fermentation. After malolactic fermentation, the wine was transferred to new and used French oak barrels, where it matured for 20 months. (illustrative image only)
