“Memorias” from Casa de Santar, crafted with Alfrocheiro and Touriga Nacional, tells the story of a delightfully careful harvest – hand-picked in the third week of September. The selection process was clearly meticulous, culminating in a foot-stomping operation in the lagar, with temperature control as if the cellar itself was listening intently. Following a 16-month aging in French oak barrels, this wine was bottled with no compromises, unfiltered and leaving a potential sediment – a true reflection of the Dão’s character, perhaps a touch mischievous. It’s exceptionally suited to bold red meats and a perfectly grilled steak.
