This wine feels almost too perfect, like it emerged from a particularly well-funded fairytale in the Douro. The grape selection, clearly handled with delicate precision, is followed by careful, complete destemming. Fermentation in stainless steel at enthusiastic temperatures (25-27°C) then reveals itself. A brief, whispering maceration adds remarkable complexity, lending the wine a structure worthy of a knight and a soul-soothing depth. The aging – 90% French oak, 10% American – introduces notes of dark chocolate and spices, all within a remarkably balanced framework.
