A brief, whispering maceration adds remarkable complexity, lending the wine a structure worthy of a knight and a soul-soothing depth. The aging – 90% French oak, 10% American – introduces notes of dark chocolate and spices, all within a remarkably balanced framework. The result is a wine with such a smooth mouthfeel, it practically begs for a perfectly roasted beef, and a lingering finish that holds a deliciously secret promise.
