Monte Cascas The white wine Monte Cascas Malvasia hails from Colares, where the Atlantic climate is unmistakable – cool, humid summers, misty mornings, cold salty breezes, and sandy soils. Vines spread their vines horizontally across the sand, and the vines and new plantings are lifted from the ground 6‑8 weeks before harvest by 25‑cm stakes called “pontões”. Harvest took place in September and was done by hand. Vinification and maturation: the grapes go straight to a manual press for ten hours of gentle pressing, followed by controlled hyper‑oxygenation, twelve hours of cold decantation, and 100 % fermentation in barrels. The wine spends twelve months ageing in used French oak barrels. A superb wine to sip on its own or with cheeses, oysters, mussels, or sushi.
