“Captured at the very first light of dawn, these grapes are swiftly brought in before the full heat of the sun can steal their delicate character. A gentle pressing preserves the nuanced flavours of the key grape varieties – Viosinho, Arinto, Antão Vaz, Roupeiro, Verdelho and Semillon – followed by cool, stainless steel ageing at just 10°C. The controlled fermentation, between 12°C and 14°C, ensures a vibrant freshness. It's a beautifully restrained Alentejo white, perfect with grilled fish or roasted chard.”
