This Monte de Pinheiros from Adega Cartuxa is a seriously clever bit of winemaking – you could almost hire an engineer to admire the system. They’ve cleverly used gravity instead of pumps to move the grapes, combined with meticulous sorting, ensuring every drop of the Fundação Pinheiros, born from Aragonez and Trincadeira de Moura, retains its purity. It’s a remarkably elegant wine, and would pair beautifully with a good selection of cheeses or, perhaps, a hearty plate of *porco à alentejana*.
