Vinification: This wine was made from grapes previously selected from our best vineyards to ensure strict control over their maturation over several months, ultimately choosing the finest at their peak ripeness. Upon arrival at the cellar, the grapes were crushed immediately. Then, during the first 6 to 10 days of alcoholic fermentation, the must was left in prolonged contact with the skins. The fermentation process occurred at a controlled temperature of 25 to 28 °C. The wine aged for 12 months in stainless‑steel tanks and an additional three months in wooden barrels to gain more structure and complexity before bottling.
