Vinification: To make this wine, we first selected vineyards with special conditions (sunlight, soil composition, etc.) to carefully control the maturation of the grapes, in order to choose the best harvest time and select only the finest. In the winery, the grapes were crushed and the must was left in contact with the clear skins and clarified for 18 to 24 hours. Alcoholic fermentation took place at 15 °C, after which the wine aged in French oak barrels with “bâtonnage sur lie” for several days. The entire vinification process was carried out with separate lots of grapes. Following a sensory evaluation of each wine’s evolution in spring, the final blend was decided and composed. This final wine was bottled and then rested for three months in the bottle in our cellar.
