Montes Ermos grapes are hand‑harvested and undergo cold fermentation at around 16 °C in a reducing atmosphere, with gentle crushing and pressing in an inert environment to preserve aromatic nuance. A portion of the wine ferments in used French oak, remaining there after a short period of fine‑leaf storage with regular agitation (“battonage”) before blending with wine in stainless‑steel tanks. Final fermentation and ageing occur in French and American oak with continuous “battonage” until bottling.
