That 48-hour cold maceration is certainly precise, and the stainless steel fermentation afterwards keeps things under control. The brief barrel ageing in 400L vessels adds a velvety texture, ideal for pairing with grilled beef and aged cheeses. It's a wine that demands attention, but rewards it handsomely.”
