Niepoort A Bairrada is a region of excellence in sparkling wine production. The limestone terroir and the natural acidity of the Bical, Cercial and Maria Gomes grapes are exceptional characteristics that enable the creation of high‑quality sparkling wines. In 2013, following the tradition of Quinta de Baixo to produce classic‑style sparkling wines with a very low dosage, Niepoort created Água Viva, a brut sparkling wine. Vinification: The 2019 season brought some rain, and an intense cold in March led to a reduced yield. A warm spring caused the grapes to ripen earlier, resulting in an early harvest. The harvest for the white wines began on 26 August and finished with the reds on 26 September. It was a good year, with balanced acidity. Although the alcohol level was higher than the previous year, the freshness and elegance characteristic of Quinta de Baixo wines were still maintained. Gastronomic suggestion: Pairs very well with fatty dishes (Leitão, roasted goat in a wood‑fired oven, cod).
