Niepoort Nat Cool, naturally “cool and funky,” is an innovative concept created by Niepoort—a collaborative movement among various producers aiming to craft light, easy‑to‑drink wines. We’ve made a wine that recalls the “turvos” of old: bottled early with a touch of residual sugar and fine lees, allowing the wine to referment in the bottle and produce natural carbonation. Welcome to the NAT COOL universe! Vinification: Most of the grapes come from the Lousada sub‑region. Traditional winemaking is employed, leaving the final grams of sugar to ferment in the bottle with fine lees. Malolactic fermentation also takes place in the bottle. Best paired with Portuguese snacks such as pataniscas, bacalhau pastéis, and enchidos.
