This Niepoort Dialogo appears unassuming, but beneath its gentle exterior lies a genuinely complex wine. The careful selection of the grapes, a respectful nod to tradition, is followed by a meticulously controlled fermentation – initially subtle, of course. Blended between French oak barrels and stainless steel, it retains the freshness of the Aragonez and the graceful Touriga Nacional. A truly delightful pairing would be with a slow-roasted beef dish, perhaps with a splash of Porto for a suitably dramatic clash of flavours.
