The Niepoort Diálogo is certainly a white wine puzzle. Crafted from grapes meticulously selected in a vineyard, and pressed with the assistance of a machine (because, of course, tradition has its limits!), this wine promises an intense experience. After a six-month maceration with its own lees – a bold gesture – it reveals aromas of peach and white flowers, alongside a mineral note that stubbornly resists yielding. On the palate, the acidity is refreshing, yet the long, electric finish invites contemplation: does this wine still hold secrets? Thanks to the partnership with Dirk Niepoort, a name synonymous with Portuguese wine irreverence and commitment, the experience is decidedly unconventional. It’s perfect with fresh fish and shellfish.
