This Niepoort Nat Cool, born from century-old vines in the Bairrada, seems to have had a delightfully rebellious adolescence – and, frankly, it’s wonderfully refreshing. The extended, five-week fermentation in stainless steel has gifted the wine with a vibrant, almost audacious acidity. The subsequent malolactic conversion, also in inox, adds a surprising smoothness, a clever touch characteristic of the Niepoort house. Bottled unfiltered, this wine retains immediate freshness, as the name suggests. Wonderful with grilled fresh fish or a summer fruit salad.
