This Nuno do Ó is a true throwback to traditional Bairrada winemaking. The slow, foot-treading fermentation gives it a wonderfully distinctive texture, like a lingering memory of the old lagares. Predominantly Baga, the grapes deliver fresh red fruit aromas with a lovely herbaceous note – a clear sign of those limestone slopes. It’s a wine that would pair beautifully with a classic Bacalhau à Brás to tame its intensity.
