This Pai Horácio is a truly deserving tribute to tradition, crafted from the very best vines – a testament to the brilliance of “Vinhos Velhas”. Grown at altitudes between 160 and 650 metres on schist and granite soils, it’s a wine that demands a little patience to reveal its secrets. The meticulous winemaking – including crushing and pressing under an inert atmosphere – combined with the bâtonnage during fermentation in French oak barrels, delivers a remarkable complexity, ideally suited for delicate fish and seafood… or, if your palate’s feeling adventurous, a hearty rabbit!
