This Palácio dos Távoras is a remarkably thoughtful wine, particularly considering its use of Alicante Bouschet. Following careful, manual harvesting – think traditional 20kg crates – the grapes underwent a leisurely two-day maceration, as if the wine itself needed time to ponder its origins. Fermentation was meticulously controlled at 24°C, and a subsequent 18 months aging in new French oak barrels adds a touch of refinement that's sure to please discerning palates. Seriously, it’s fantastic with grilled beef.
