This Palácio dos Távoras Alicante Bouschet Magnum seems to operate on its own schedule – a deliberate, perhaps even indulgent, approach. Harvested by hand and transported in 20kg boxes, the wine undergoes a luxurious, 48-hour pre-fermentation maceration. Fermentation, carefully monitored at a generous 24°C, is then followed by a 18-month ageing in French oak, adding a touch of refinement without sacrificing the Alicante Bouschet’s characteristic rustic charm. Perfect with a hearty beef stew, it evokes the landscapes of Trás-os-Montes.
