This Palácio dos Távoras, hailing from the historic Vinhas Velhas of Trás-os-Montes, certainly has a story to tell. The winemaking process – involving robust crush and maceration – clearly left its mark. Fermentation took place meticulously in stainless steel, keeping temperatures consistently below 24°C to retain that vibrant freshness from the indigenous Portuguese grapes. After a ten-month maturation in French oak barrels, which imparted a lovely layer of ripe white fruit, the result is a complex wine with a pleasing dry finish. It’d pair beautifully with aged cheeses or a perfectly grilled white fish, wouldn’t it?
