Pear-Manca Pear-Manca is made from the traditional Aragonez and Trincadeira grapes, carefully harvested from vines that are over 30 years old. The grapes, sourced from selected plots, mature in a balanced way, preserving the aromas and the unique character of the varieties. After the harvest at the ideal point, they are taken to the cellar, where they undergo total de-stemming, rigorous optical selection, and gentle crushing. Fermentation takes place in French oak vats with temperature control, followed by an extended post‑fermentation maceration, ensuring a deep extraction of the desired compounds. The wine ages eighteen months in French oak barrels and then in the caves of the Cartuxa Monastery.
