This Pera Manca is a delightfully understated indulgence, nurtured under the watchful eye of the Fundação Eugénio de Almeida. The Arinto and Antão Vaz grapes truly shine here, benefiting from a careful approach – gentle pressing, a touch of cracking, and just enough pressure. The resulting juice spends time in both stainless steel and French oak, undergoing a controlled fermentation at 16°C, bolstered by batonnage for added complexity. Twelve months ageing on the lees results in a remarkably smooth texture, a wine that’s utterly perfect with a perfectly grilled fish and seafood rice – a truly elegant pairing.
