The grapes, harvested at the precise moment, underwent careful, temperature-controlled maceration at 10°C before being pressed and fermented in French oak barrels – a classic touch that beautifully balances the fruit with the wood. The 5-month battonage added a remarkable level of complexity, while the extended lees aging for 8 months simply refined the flavour. An excellent pairing for rich fish, oysters, or seafood, or even to impress with leaner meats.
