Pouca Roupa Vinification: The grapes are destemmed and gently crushed, then cooled inside the vat to 10 °C. They rest for eight hours, allowing for greater extraction of aromas from the skins without necessarily extracting too many anthocyanins and tannins. Subsequently, the must to be fermented, obtained before pressing, is clarified and fermented at a controlled temperature.
