This Prieto Pariente La Provincia feels like it’s sprung straight from a fairytale – or, at least, a very well-managed cellar. The spontaneous fermentation, utilising stainless steel tanks and careful temperature control, hints at a producer who trusts in the natural rhythm of the grapes. Following this, judicious ageing in a blend of French oak barrels (225L and 500L) gives it an incredibly velvety texture. On the nose, red fruits and cherry liqueur dance, but on the palate, this wine is surprisingly sweet and charming, a genuine invitation to pleasure. Absolutely brilliant with a hearty roast or, dare I say it, grilled sardines – a pairing that, with this wine, feels almost sacrilegious!
