Quinta da Bacalhôa With vineyard records dating back to the 15th century, Quinta da Bacalhôa has a long winemaking tradition. In 1974, the world’s most famous French red varieties – Cabernet Sauvignon and Merlot – were planted, giving rise in the 1979 harvest to the first Cabernet Sauvignon/Merlot produced in Portugal. Since then, the terroir of Quinta da Bacalhôa has allowed the creation of an elegant wine, with great aging potential, that has become a true classic among Portuguese wines. The vineyard benefits from an ideal terroir for producing exceptional wines: sandy‑loam soils that are well drained and a mild climate influenced by the Atlantic. The Cabernet Sauvignon and Merlot varieties thrive under these natural conditions, permitting slow and balanced ripening. After controlled‑temperature fermentation, the wines undergo a period of “cuvaison” – post‑fermentation skin maceration – for two weeks, intensifying colour and structure extraction. Stage: 13 months in new French oak barrels, followed by a minimum of 6 months of bottle ageing.
