This Síria from Quinta da Biaia seems to have been persuaded to embrace a touch more sophistication than its neighbours. Hand-picked and gently pressed, it clearly benefited from careful attention, while barrel fermentation – one-year French oak – suggests a wine ready to impress. The weekly battonage, however, ensures a freshness and texture reminiscent of the region’s older, more established wines, pairing beautifully with sautéed mushrooms and fresh fungi.
