Quinta da Pacheca BARREL MATURED 12 months in French oak and second‑year acacia barrels with weekly bâtonnage Grapes: This wine is made from Viosinho and Rabigato grapes from several vineyard plots planted at 300 m altitude. Vinification Method: After careful selection for optimal condition, the grapes were harvested into 25 kg barrels and sent to the vinification centre where they were gently pressed in a pneumatic press. The resulting must was transferred to stainless‑steel tanks, inerted and cooled, where it settled for 24 h. At the end of this period it was moved to another stainless‑steel tank, inoculated with selected yeasts, and fermentation started. After 48 h of alcoholic fermentation it was transferred to 500 L French oak and acacia barrels where fermentation finished. The wine spent 12 months in the barrels, undergoing weekly bâtonnage on fine lees. Winemaker: Maria Serpa Pimenta
