Quinta da Vacaria Winemaking: The Porto wine Quinta da Vacaria LBV comes from low‑production vineyards that are over 30 years old. The grapes were transported in 20‑kg food‑grade plastic crates and subjected to rigorous sorting upon entry to the cellar. After a gentle crushing without destemming, they were sent to a traditional press where they were pressed by men at regular intervals. A brief fermentation period followed, during which the traditional pressing extracted colour, tannin and flavour from the winemaking mass. After rigorous control of density (Baumé scale), wine brandy was added, thereby stopping fermentation at the press exit. Maturation: Its ageing took place for 4 to 6 years in large oak barrels; it was bottled without any fining or filtration, remaining subject during its ageing to produce a slight sediment.
