Quinta das Brôlhas All vineyards at Quinta das Brôlhas are divided into distinct parcels, each of which is hand‑harvested. The grapes are selected before entering the cellar. They are destemmed and pressed in carboys for 1–3 days before fermentation begins, which takes place in the same carboys. The wines are stomped by foot each night, and the old “macacos” (traditional foot‑treading devices) are used to lower the cloth during the day. Once fermentation is complete, the wines are moved cleanly to stainless‑steel tanks where malolactic fermentation occurs. The Quinta das Brôlhas Reserva ages for 18 months, with part of the wine spent in new 225‑liter French oak barrels and the remainder in used 225‑liter French oak barrels.
