Quinta das Marias Dão DOC. Harvest: Manual harvest carried out in September. Vinification: 80 % Alfrocheiro Preto and 20 % Touriga Nacional. The grapes are hand‑picked in 20 kg crates and transported to the cellar, where they undergo a meticulous manual selection. They are then destemmed and lightly crushed, followed by a gentle pressing. The must is decanted and fermented in stainless‑steel tanks with temperatures controlled between 16 °C and 18 °C for about 15 days. Stage: On fine lees for 3 months.
