Winemaking: The 2016 vintage in the Dão region was marked by a dry winter, and the spring rains that fell early in the season allowed the soil to retain some water reserves, which supported the vines during the dry summer months. Because it was an early year, by July the vines were already in the ripening stage, and the harvest began a week earlier than the previous year. After a careful selection both in the vineyard and in the cellar, fermentation took place in stainless‑steel vats with temperature control. The wine then matured for 12 months in third‑year Allier oak barrels.
