This Alvarinho sparkling wine from Quinta de Santiago is clearly the result of a very pampered upbringing – hand-picked in 20kg crates, naturally, to ensure maximum finesse. The direct pressing, followed by six months of lees clarification, delivers a wonderfully vibrant and aromatic finish. But the cherry on top was the second fermentation in the bottle, letting the native yeasts work their magic. And, to round it all off, a touch of aged wine added during bottling... a classic flourish promising a truly memorable toast. Delicious with fresh fish or seafood, of course.
