Quinta de Ventozelo Grapes were hand‑harvested in September into 25‑kg crates. After selecting bunches in the vineyard, the berries were also optically screened at the cellar entrance to ensure only perfect berries were used. They were then cooled, destemmed and pressed in an inert environment. The subsequent cold decantation and fermentation took place at 16 °C in stainless‑steel tanks.
