Quinta do Pessegueiro The 2019 vintage was dry. Occasional rainfall during the harvest period had a very positive impact on the maturation process. The harvest produced high‑quality, aromatic musts, generally with higher acidity than in previous years. Harvest took place in September. The grapes were transported in 22‑kg crates to the cellar. They spent 12 hours in a cold room, were destemmed, partially crushed, and gravity‑driven to a granite press where complete alcoholic fermentation took place with foot‑treading. Afterwards, the wine was moved to a 1,700‑liter oval cement vat for malolactic fermentation. The wine aged in the same vat for 12 months. Bottling occurred in May 2021.
