Quinta do Pessegueiro SOLO: Slate CLIMATE The 2019 growing season was marked by large temperature swings and below‑average annual rainfall, making it a dry year. Occasional rainfall during the harvest period had a very positive impact on ripening. The harvest delivered high‑quality, aromatic musts, generally with higher acidity than in previous years. WINEMAKING The harvest took place in September. The grapes were transported in 22‑kg crates to the cellar, where they sat for 12 hours in a temperature‑controlled chamber. They were then destemmed, partially crushed, and gravity‑driven to a granite press, where complete alcoholic fermentation took place with indigenous yeasts and hand‑pummeling. The wine was subsequently transferred to 225‑L stainless‑steel tanks for malolactic fermentation. It aged in the same tanks for 12 months. Bottling occurred in May 2021.
