The native fermentation and mechanical treading ensure the berries fully express their potential, revealing delightful floral and spice notes on the nose. On the palate, the acidity is beautifully engaging, complemented by an elegant mineral finish, reminiscent of the Dão’s very bedrock. Absolutely perfect with a robust beef stew, perhaps with a fish sauce reduction, to balance the intensity.
