Quinta dos Carvalhais Reserva is a premium red wine from the Dão, produced from a select lot released only in years of exceptional quality. It represents the best of Dão, marrying ancient traditions with modern innovation to create wines of great elegance, intensity, and delicacy that reflect the diversity and immense potential of the region. **Vinification** The grapes were harvested by variety and plot and vinified separately. Upon arrival at the cellar, they were unloaded from 20‑kg crates directly into a destemmer‑crusher, where they fell by gravity into small stainless‑steel vats. Alcoholic fermentation lasted about eight days at an average temperature of 28 °C, with the Touriga Nacional undergoing post‑fermentation maceration. **Maturation** After alcoholic fermentation, malolactic fermentation took place in stainless‑steel vats. The wine then spent twelve months aging in new and used French oak barrels. It was lightly racked and filtered before bottling.
