This white from Quinta dos Carvalhais – a project by Sogrape that boldly celebrates Dão tradition – is a rewarding patience exercise. After years ‘sleeping’ in oak, it unveils a wine with surprising notes of gunpowder, a clear nod to the wood, alongside a delicate truffle suggestion. Honey and nuts add a touch of sophistication, while the Encruzado, blended with Gouveio and Sémillon, delivers the complex terroir characteristic of the Dão, particularly thanks to the Van Zeller Guedes influence. Absolutely brilliant paired with mushroom dishes, or for those who enjoy a wine that delightfully subverts expectations.
