Quinta dos Poços We give absolute priority to vine care to obtain excellent raw material. In the cellar, the grapes are selected on a choice table, fully destemmed and gently crushed. Vinification, carried out separately by variety or plot, is processed in granite vats with foot‑press or in stainless‑steel tanks with rigorous individual temperature control, thereby adjusting fermentation temperatures to the characteristics of the musts. High‑quality French oak barrels are used for extended aging periods of 12 to 24 months. After bottling, the wines age for an additional 6 to 12 months in the cellar before release to the market. Climate: Atlantic with Mediterranean influence. Soil: Sandy. Winemaker: Eng. Pedro Francisco. Vinification: Performed in granite vats with foot‑press or in stainless‑steel tanks with rigorous individual temperature control. Maturation: 12 months in French oak barrels. Pairing: Ideal with stewed meat, game, or aged cheeses. Open the bottle about an hour before serving. Shelf life of 5 years. After this period, the wine should be decanted before serving.
