Quinta dos Poços: We give absolute priority to vine care to obtain the finest raw material. In the winery, the grapes are selected on a choice table, fully destemmed and gently crushed. The vinification, carried out separately by grape variety or plot, is processed in granite vats with foot stamping or in stainless‑steel tanks with strict individual temperature control, thereby matching fermentation temperatures to the musts’ characteristics. The wine is aged in the highest quality French oak barrels for extended periods of 12 to 24 months. After bottling, the wines mature further for 6 to 12 months in the cellar before release to market. **Climate:** Atlantic with Mediterranean influence. **Soil:** Xistoso soil. **Winemaker:** Eng.
