Quinta dos Poços gives absolute priority to vine care to obtain excellent raw material. In the winery, the grapes are selected on a choice table, fully destemmed and gently crushed. Vinification, carried out separately by variety or plot, takes place in granite vats with foot‑press or in stainless‑steel tanks with strict individual temperature control, thus tailoring fermentation temperatures to the musts’ characteristics. French oak barrels of the highest quality are used for extended periods of 12 to 24 months. After bottling, the wines are further aged between 6 and 12 months in the cellar before release to market. Vinification: In granite vats with foot‑press for five days of alcoholic fermentation, followed by 48 hours of maceration in stainless‑steel tanks after aguardente in masses.
