Ramilo The red wine Ramilo Ramisco Castelão is a DOC Colares wine, one of Portugal’s oldest and most distinctive origin denominations. Produced using organic methods, it comes from vineyards planted with the Atlantic at eye level and the Serra de Sintra as a backdrop. Enology: This batch blends 70 % Ramisco and 30 % Castelão. The grapes, harvested manually, were carefully selected and destemmed upon arrival at the cellar. Spontaneous fermentation, without yeast inoculation, took place in a stone vat with foot‑pounding for a week. After malolactic fermentation, the wine aged for six months in used French oak barrels before bottling. Food‑pairing suggestions: This wine can be enjoyed on its own, in good company, or paired with grilled meats or strong‑flavoured cheeses, elevating any special occasion.
