Description

Ravasqueira At Ravasqueira there is a concern and a taste for the challenge of producing innovative, differentiated and disruptive wines. This is a very special wine, both for its production method and for its vinification or viticulture approach. A wine that aims, above all, to surprise and evoke strong emotions that make its tasting a memorable moment. Vinification: The initial harvest involves selecting only one bunch per vine; afterwards, these bunches are manually harvested during a cool morning at the end of September. Transport to the cellar is done in 20‑kg crates. The grapes are stored in a refrigeration chamber at 0 °C and frozen for 12 days at –5 °C. The chosen bunches are pressed in a pneumatic press at 2 °C for 16 hours. Alcoholic fermentation and aging take place in stainless‑steel tanks over lees, with gentle batonnage.
