The winemaking process is meticulous: a complete délestage, pneumatic pressing, and strict temperature control (16°C) during fermentation in stainless steel tanks, further enhanced by a four-month ageing on French oak barrels. The result is a wine of vibrant citrine colour, bursting with floral aromas and tropical notes, offering a wonderfully refreshing acidity and a long, satisfying finish. Having earned a 91/100 from Wine Enthusiast and 89/100 from Robert Parker, this wine pairs beautifully with grilled seafood or a white fish, truly capturing the soul of the Dão.
